Salt from Colima, Mexico

After reading about the unique salt pans in Colima, Mexico I had to go see for myself. Chef Nico, a chef and native of the state of Colima, took me to participate in the harvesting of the precious sea salt that is pumped from underground between the Atlantic Ocean and a natural lagoon. The process of collecting this salt has been going on since pre-Hispanic times when it was also used as currency. Some say it is the best salt in the world, with over 20 minerals and no micro plastics. I brought back 2 suitcases of Colima salt to use in my cooking, and to share with you. Each bag holds 8 ounces of salt, which is delicious sprinkled over fish, grilled steak, and roasted vegetables. I also use it in pickled cucumbers and other vegetables.
