From the coasts of Nayarit to the jungles of Chiapas, and the rich culinary traditions of Colima and Yucatán, I have collected recipes, local ingredients, and heartfelt stories from the people who bring Mexico’s food to life and can’t wait to share them with you.
The evening begins with handcrafted tequila cocktails and freshly made guacamole. Then, sit down to a five-course dinner featuring highlights like Colima-style ceviche served with crisp tostadas, chicken marinated in achiote and roasted over a wood fire, and pork simmered in coconut vinegar, tucked into warm corn tortillas. To finish, enjoy one of Shannon’s favorites: pumpkin and honey empanadas, dusted with cinnamon—an unforgettable treat from Colima.
