Tomato & Watermelon Salad

There’s nothing more refreshing in the summertime than a sweet watermelon. You might not think of a salad made with cubes of watermelon and vine-ripe tomatoes, but the combination is perfect, especially with the tangy flavor of Greek feta. I like to add red onion and toasted pistachios with a spicy dressing for one of the best salads of the summer. A variation is to substitute the tomatoes with slices of peaches or plums. To save time, slice the watermelon a day ahead and make the dressing. When you’re ready to combine everything, you’ll have a refreshing salad that you’ll never forget.


PROCESS

Combine vinegar, sugar, salt and pepper in small bowl. Whisk together and add onion. Let sit until onion becomes soft, about 30 minutes. Whisk in olive oil.

In serving bowl, combine watermelon, tomatoes, and feta. Gently toss with dressing. Add pistachios, basil and mint. Season with salt and pepper. Serve cold or at room temperature.

 

INGREDIENTS

Serves 6-8

  • 4-lb. seedless watermelon, w/ rind removed, cut into 1” chunks

  • 4 ripe tomatoes, cut into 1” chunks

  • 4 ounces feta cheese, crumbled

  • ½ cup pistachios, toasted and coarsely chopped

  • 1 cup fresh basil, torn

  • 1 cup fresh mint, torn

Dressing

  • 1/4 cup Champagne vinegar or white vinegar

  • 3 teaspoons sugar

  • 1 teaspoons kosher salt

  • 1/4 teaspoon cayenne pepper

  • 1/2 small red onion, thinly sliced

  • 1/4 cup olive oil'
