Ham and Cheese Muffins

These muffins might just change your life because they are just so good! Use good quality ham and cheese because their flavors are going to explode when you bite into these gems. I sometimes use smoked cheese and add a minced jalapeno for a little heat. Once baked, they freeze well, but really taste their best warm from the oven.


Ingredients

Makes 10

Ham and Cheese Muffins:

  • 1 1/2 cups all purpose flour 

  • 1 1/2 tablespoon sugar 

  • 1 1/2 tablespoon baking powder 

  • 1/2  teaspoon salt

  • 2 cups Sharp cheddar cheese 

  • 1 cup chopped ham 

  • 1 cup milk 

  • 1 egg beaten

  • 1/4 cup melted butter

Process

Preheat oven to 375 degrees. In a medium bowl, whisk the flour, sugar, baking powder, and salt together. 

Stir in cheese and ham. In a small bowl, stir milk, egg, and butter. 

Add dry ingredients and stir just until the batter comes together. 

Do not over mix. Scoop batter into 10 cups of a buttered muffin pan, filling 3/4 full.

Bake for 35 minutes.
