Golden Hour Spritz

This cocktail takes me back to a late afternoon on a veranda in Cape Town, South Africa watching a stunning sunset. The citrus is fresh and bright, balanced by a hint of sweetness from the honey and thyme syrup. Finished with bubbles, it’s light, refreshing, and easy to enjoy any time of day.


PROCESS

In a cocktail shaker with ice, add the vermouth, grapefruit juice, lemon juice, and syrup. Shake lightly and strain into a glass filled with ice. Top with Prosecco and add a dash of orange bitters. Garnish with a cocktail spear of grapefruit and thyme.

Honey-Thyme Syrup:
In a small saucepan, combine all ingredients and bring to a simmer for about 5 minutes. Cool and remove thyme leaves. Store any leftover syrup in a jar in the refrigerator up to 2 weeks.

 

INGREDIENTS

Makes 1 cocktail:

  • 2 ounces dry vermouth

  • 1-ounce fresh grapefruit juice

  • ½ ounce fresh lemon juice

  • ½ ounce honey-thyme syrup (recipe follows)

  • 2 ounces Prosecco

  • 1 dash orange bitters

  • Grapefruit segment

  • Thyme Sprig


    Honey-Thyme Syrup

  • ½ cup honey

  • ½ cup water

  • 3 sprigs of fresh thyme
