Fire, Salt, and Spices Wine Dinner - April 29

There is something ancient and mesmerizing about cooking over open fire, the crackle of wood, the scent of smoke in the air, and the way simple ingredients transform with heat, salt, and spices.

For this special outdoor dinner, guests will be seated in my outdoor kitchen and around the pool while I cook the meal over live fire. The evening is inspired by the work of legendary Argentine chef Francis Mallmann, who has become famous around the world for his dramatic open-fire cooking and his philosophy that fire, salt, and patience are all a great cook truly needs.

Inspired Chef Mallman, this dinner celebrates the bold flavors of fire cooking.

The evening’s menu will include empanadas cooked in a wood-fired oven, a bright quinoa salad, and a mixed grill of meats and locally made sausage cooked over open flame. We’ll finish the night with smoked apple crisp served warm with ice cream.

It will be a relaxed evening filled with firelight, great food, and the kind of communal table that reminds us why cooking outdoors is one of the oldest and most joyful ways to gather.
